Dinner for 1?

Hiking from Georgia to Maine has been on my mind for years. The only mysterious question for me was;

What the hell am I going to eat?

As a backcountry chef, meal planning, food acquisition and preparation for 20 or more is second nature! Outfitters have herds of creatures bred to carry me and tons of food and supplies 27 miles into the  Montana wilderness.

No big deal!
Now, I have to do the same thing, but just for me! On my back for 2,189 miles? Are you kidding?

    This is my brother-in-law and I am very lucky to know him! He is doing something I would love to do but don’t have the backbone to do it. I hope this is something he will share with us when he gets back!!
