3/4 cup raisins
1 cup lightly salted almonds
1 cup pitted dates
1/2 cup shredded coconut (optional)
Step 1: Add the raisins, almonds, dates and coconut to your food processor and mix until combined.
Step 2: After about 1 minute, the ingredients will form into a giant ball. You may choose to take the mixture out earlier if you prefer more almond crunch (yum).
Step 3: Pull a part tablespoon-sized chucks and roll them into balls or logs.
Step 4: There’s a couple different ways you can store/package them:
- On shorter hikes, I prefer wrapping these little beauties individually in parchment paper.
- For the PCT, I rolled the mixture out to desired thickness and used a cookie cutter to cut out servings. To pack, I lined them up in rows separated them with parchment paper. Vacuum seal them into 1-2 convenient grab bags. Store them in the fridge until you’re ready to pack them away in a resupply or eat. On the trail, you can remove the parchment paper and re-bag into snack baggies! At that point, who cares if they stick.
